The History and Cultural Significance :
The origins of Sarbath trace back to centuries, where it was crafted as a remedy to beat the oppressive heat. It comes from the Persian word Sharbat, a drink prepared from fruit or flower petals, it is a sweet cordial/squash and usually served chilled.
Popular sharbats are made of one or more of the following: basil seeds, rose water, fresh rose petals, sandalwood, bael, hibiscus, lemon, orange, mango, pineapple, grape, and chia seeds etc (Source wikipedia)
Sharbat is still very common in the Middle East and Asian countries. Popularly served during the month of Ramadan for breaking the daily fast among Muslims.
The tropical climate with hot and humid summers in Tamil Nadu and Kerala, Sarbath vendors, known as 'sarbath kaarans,' have long been a common sight in the bustling markets. These vendors, with their colorful glass bottles filled with vibrant syrups, have been serving up refreshment to locals and travelers alike.
Sarbath holds a special place in the hearts of the South Indian people. It’s not just a drink but a symbol of hospitality and tradition. During festivals, family gatherings, and even casual get-togethers, Sarbath is often the beverage of choice, embodying the spirit of sharing and community.

How to make nannari sarbath from syrup :

- Soak the basil seeds: Place the basil seeds in a small bowl with enough warm water to cover them. Let them soak for about 10 minutes until they swell up.
- Mix the base: In a glass, combine the nannari syrup, lime or lemon juice, and sugar or jaggery if you need. Stir well until the sugar or jaggery dissolves. Add soda and keep stirring with one hand.
- Add the basil seeds: Add the plumped up basil seeds to the glass.
- Serve: Add ice cubes to the glass and garnish with lime slices or with fresh mint leaves if desired. Stir well and enjoy your refreshing Sarbath!
- NOTE : Make your own syrup from Indian sarsaparilla. It makes a huge difference.
Points to remember :
- Wash the basil seeds a few times with the help of a tea strainer. Soak it in warm water for the seeds to bloom well.
- Add half juiced peel. The peel has oils which brings the citrus aroma and intensifies the flavor.
