Why do you add honey to chicken wings ?
Honey seals the moisture inside and gives a beautiful color to the chicken wings without being too sweet taste wise. I have used Mike's hot honey here which is even better. Not sweet at all but more to the spicy side. My family and friends simply love the flavored version. (not sponsored)
Why do you add cornstarch to chicken wings?
The cornstarch helps the chicken brown easily by absorbing the moisture on the outside and this helps the inside to stay juicy. It also helps thicken the sauce coating.
Why won't my chicken wings get crispy?
Do not let the wings touch each other or the bottom of the pan. If the chicken is touching any other surface it will steam and won't crisp up. Use a wire rack for even circulation of heat.
Pat dry with a thick paper towel well before beginning to absorb most of the moisture. Check you oven temperature it may not be heating up evenly or coming to the temperature shown.

Baking powder VS corn starch in chicken wings
Baking powder is primarily made out out of corn starch but cream of tartar or another acidic ingredient. It's the baking soda's alkalinity that breaks the peptide bonds in the chicken skin and allows it to crisp up. But the aluminum content in it interferes with the taste and often makes the chicken bitter.
Corn starch on the other hand dries the chicken skin and helps it crisp up more naturally.

Second marinade : Adds color and seals the moisture inside with the sticky outer coating.
Smashed potatoes : Cooking it fist until almost done helps to crisp up well in the oven.
Parmesan cheese : Elevates the flavor of the smashed potatoes.

Honey glazed chicken wings
Ingredients
- 10 pieces Chicken wings
First marinade:
- 1 tbsp Ginger garlic paste
- 1 tsp Turmeric
- 1 tsp Black pepper
- Salt to taste
Second marinade :
- 1 tbsp Soy sauce
- 1 tbsp Hot honey
- 1 tsp Paprika powder
- 1-2 tbsp Corn starch
Smashed potatoes
- .75 lb baby yellow potatoes
- 2 sprigs Rosemary Fresh
- 2 tbsp Grated parmesan
- 1 tsp Black pepper
- Salt to taste
Mint dip
- 5 sprigs Mint leaves
- 2 tbsp Mayo or blue cheese dressing
- Salt to taste
- Birds eye chili to garnish
Instructions
- Wash and pat dry the chicken wings apply the marinate with ginger garlic paste, turmeric powder, black pepper and salt. Keep aside for 15 minutes
- On a tray first put the wire rack then lay the wings leaving enough space in between and bake at 400°F for 20 minutes.
- Prepare 2 nd marinade by mixing the soy sauce, hot honey, paprika powder and corn starch. Put the half baked chicken into this toss well until all pieces are coated well.
- Bake for another 20 minutes until the skin is really crispy and brown. Remove brush with some hot honey (optional ) and serve immediately.
Smashed potatoes
- Cook the baby potatoes with skin in plenty of water adding salt. When it almost cook remove and cool slightly
- In a greased baking sheet put the potatoes and smash with a glass or any heavy object so it becomes flat. Sprinkle some salt and pepper on top and bake for 15 minutes. (Along with the chicken wings.)
- After that sprinkle some chopped rosemary on top and keep a pinch or two of parmesan cheese on each potato and bake for another 10-15 minutes until the potatoes crisp up a bit. Serve immediately with chicken wings.
Mint dip
- Coarsely grind the mint leaves adding blue cheese dressing and salt. Garnish with birds eye chilies.
