Peri peri chicken flavor packed juicy pan grilled chicken quarts with the goodness of coconut oil and Turmeric and coconut milk rice. A show stopper dinner to impress your special guest.
As the chicken is already marinated ideally previous night and left in the refrigerator the spices would have seeped in well. The rice cooker takes care of the perfectly cooked rice. Now you need to whip up the spiced yogurt and the weeknight meal can come together in around 25 minutes.
NOTE: - We are using a whole organic chicken and making small portions for other meals too. When you don’t want to use the entire chicken in one recipe the best idea is to make portions. Use on different days by marinating and refrigerating or freezing for later use.

How to easily cook white rice properly ?
Each rice acts a little different. After spending a tiring day at work I am guessing you don't want to stand near the stove, fuss around and do all eyeballing and check the doneness. My simple answer is please invest in a rice cooker at around 25$ - 30$. A medium good quality cooker delivers good results, does the job of cooking white rice without any hassle. It will work like a charm where each grain separates from other. You can add flavorings and oils and it will come out really well. Simply soak the rice for 10 minutes then while cooking make sure the water 1 inch above rice level when you start once the time is done you can fluff the rice. No sticking to the bottom or uncooked rice. (Not sponsored) Just my two cents.

Peri peri chicken with Turmeric rice
Ingredients
- 2 Chicken leg quarters
- 2 tbsp All purpose flour
First marinade :
- 1 tsp Paprika / Kashmiri red chili powder (Least spice more color variety)
- 1/2 tsp Turmeric powder
- 2 tsp Ginger garlic paste
- Salt to taste
Second marinade :
- 2-3 tsp Peri peri chicken seasoning mix powder I have used Manitou brand here
- 1/4 cup Coconut milk
Turmeric rice :
- 1 cup Basmati rice
- 1 tsp Turmeric powder
- 1 tsp Cumin seeds
- 1/4 cup Coconut milk
- 1-2 tsp Coconut oil
- Salt to taste
Spiced Yogurt
- 2-3 scoops Plain whole milk yogurt
- 1/4 tsp Cumin powder
- 1 clove garlic (mashed )
- few sprigs Coriander leaves chopped
- 1 tbsp Pomegranate seeds (optional)
- Salt to taste
Instructions
- Wash chicken quarters well pat dry if needed and apply the ingredients given in first marinade refrigerate at least for 45 minutes or best overnight. (Thaw if freezing )
- Wash rice 2-3 times and soak for 10 minutes in the rice cooker itself (Water level should be 1 inch or slightly more above rice level after soaking) . Into the rice add all the rest of the ingredients given under Turmeric rice (in the list above ) mix and cook in the rice cooker.
- Lightly dust the chicken all over with all purpose flour. Heat a grill pan or any heavy bottom pan adding 2 tsp olive oil / coconut oil when this heats up put the chicken quarts neatly without touching cook on high for 3 minutes.Turn and give it one more minute.
- Apply the second marinade on the chicken reduce heat cover and cook for another 15 minutes. Make sure to apply marinade on both sides and brown evenly.
- Check internal temperature in the flesh( away from the bone) and it it should be above 165°F. Allow this to rest for 5 minutes before serving.
- Meanwhile mix all the ingredients listed in the spiced ingredients. Fluff the rice. Serve a portion of rice one chicken quart per person on top and a side of the spiced yogurt.

Notes
- Coconut oil is used for grilling too as the rice is having the same base flavors feel free to go with olive oil or other cooking oils if the flavor is too strong for your taste buds.
