Ingredients:

  •  Marinade :
  • Ginger garlic paste
  •  Fennel powder Pepper powder
  •  Smoked paprika
  •  Dried parsley
  • Ground black pepper
  • Sea salt
  • Crushed red pepper
  •  Onion powder
  • Dark soy sauce
  • Turmeric powder
  • Olive oil
  • Butter

Dipping sauce :

  • Sriracha sauce
  • Sweet chili sauce
  • Mayonnaise
  • Light soy sauce
  • Wooden or metal skewers
  • Spring onion chopped (for garnish)

Step by step pics :

Marinate the shrimp for at least 15-30 minutes. The longer, the better, as this allows the shrimp to soak up the flavors.

If you're using wooden skewers, soak them in water for about 15 minutes to prevent them from burning while grilling.

Heat a grill pan over medium-high heat and lightly grease it with olive oil. Once the pan is hot, place the shrimp skewers onto the grill pan. Cook each side for 2-3 minutes until the shrimp turn pink and are slightly charred. Be careful not to overcook, as shrimp become rubbery when overdone. Pan sear pineapple in the same pan to soak up all the flavors

  • 1 lb large shrimp peeled and deveined

Marinade

  • 1 tbsp Ginger garlic paste
  • 1 tsp Fennel powder
  • 3/4 tsp Pepper powder
  • 1 tsp smoked paprika
  • 1 tsp Dried parsley
  • 1 tsp ground black pepper
  • ½ tsp sea salt
  • 1/2 tsp crushed red pepper
  • 1/2 tsp Onion powder
  • 1 tbsp Dark soy sauce
  • 1/2 tsp turmeric powder
  • 2 tbsp olive oil
  • 2 tbsp Butter unsalted

Dipping sauce

  • 2 tsp Sriracha sauce
  • 2 tsp Sweet chili sauce
  • 3-4 tsp Mayonnaise
  • 1 tsp Light soy sauce

Others

  • 3 stalks Spring onion chopped (for garnish)
  • 12-15 Wooden or metal skewers

Instructions
 

  • Marinate the Shrimp
    Start by marinating the shrimp with all the items given under the marinade list, in a bowl. Toss until fully coated. Let the shrimp marinate for at least 15-30 minutes. The longer, the better, as this allows the shrimp to soak up the flavors.
  • Prepare the Skewers
    If you're using wooden skewers, soak them in water for about 15 minutes to prevent them from burning while grilling. Thread the marinated shrimp onto each skewer, make sure its neat and flat for even cooking.
  •  Pan-Grill the Shrimp
    Heat a grill pan over medium-high heat and lightly grease it with olive oil. Once the pan is hot, place the shrimp skewers onto the grill pan. Cook each side for 2-3 minutes until the shrimp turn pink and inside looks opaque.The skin can get slightly charred. Brush with a cube of butter for the rich taste and aroma.Be careful not to overcook, as shrimp become rubbery when overdone.
  •  Garnish and Serve
    Once cooked, remove the skewers from the grill and garnish with freshly chopped spring onion or parsley. Serve with lemon wedges for an extra burst of citrus flavor.
  • Pan sear pineapple slices in the same pan to soak up all the flavors, Serve along with shrimp skewers.
  • Make the dipping sauce by mixing all the ingredients given under the list adjust thickness as required. Serve along with shrimp on the side.
