Indian summers are unbearable even if one decides to stay indoors, I am talking about 100°F and above. Sweat breaks even before opening the gym door in such conditions keeping oneself hydrated is the only way to stay healthy.
Here is one such filling and a thirst quencher lassi recipe, the most popular drink served in Indian restaurants all around the world.
Recipe FAQs
Alphonso mangoes are considered the King of mangoes and the best choice for making mango lassi. As it has pleasant mango fragrance, rich, creamy, tender and delicate texture, non-fibrous, juicy pulp. Ratnagiri, Kesar, Malgova, Totapuri, Banganapalli etc are best Indian variety of mangoes.
Ataulfo, Kent, Haden etc are your options if you live in the Untied States. These mangoes are imported from Mexico.
Go to a good Indian grocery store or Costco for ripe sweet mangoes. If fresh is not available then freezer section too has a good selection. Canned Alphonso or Kesar is a good substitute for fresh mangoes.
Mango lassi is made with fresh mango pieces or the next best option is from the canned pulp.
How to choose a good mango ?
- Do not go by the color.
- Give a gentle squeeze. A ripe mango will give slightly. A medium-ripe mango will be somewhat firm, and an unripe mango will be very firm to the touch. It is similar to how you would pick an avocado or peach and know its ripeness on touch.
- Most ripe mangoes will have a fruity scent near the stem of it.
- Never use a tart mango you get in regular grocery store used for salads in making mango lassi.
- If you find the mango to be too fibrous then straining the liquid before serving is advisable else its like hair stuck in the mouth feel and destroy the lassi drinking experience.
