Purple Potato Salad with Grapefruit Vinaigrette a creamy delicate salad with pretty colors and citrusy sweet flavors from the vinaigrette to complement the spicy barbecued meat.

Purple potato ...looks  like the pansies or lavender heads on top of the salad don't they...:)

 

When turkey takes the center stage for Thanksgiving the side dishes that satisfy everyone's taste is still a struggle.Gets even more brains racking if there are vegans in the group.Why settle for everyday stuff when you have a crowd pleaser salad with citrusy vinaigrette to impress.:))
This salad has everything that cuts through the richness of other creamy dishes happening alongside with a citrusy mint vinaigrette with a tinge of sweetness to cleanse ur palate.

The measurements given here are approximate so play around with the recipe.You can never go wrong with a salad !

 

I prefer to cut the veggies into bite size pieces since the person who eats can see the  veggie they don't eat like onions.
Salad ingredients:
Purple potato - medium size -4
Persian cucumber- 2-3 cut into thin rounds
Grape tomatoes- 8 cut into two
White onion - 1/2 of 1 - small cubes
Spring onion -3 strands chopped
Pomegranate -1/4 of 1

Method:
1.Potato has a tendency to get mushy when boiled in water so  I usually steam it in a steamer just until a knife can be inserted without any effort. Once cool peel of the skin and cut into 6 pieces.
2.Arrange all the veggies on a platter and drizzle  the vinaigrette evenly on top only as much as needed ,do not mix too much.

 

Grapefruit Vinaigrette:
Grapefruit -1/2 of 1
Lime - 1/2 of 1
EV Olive oil - 1/4 cup
Mint leaves- a few (torn intosmall pieces)
Crushed pepper and Salt to taste.
Sugar or honey - 1/2 tsp (optional)

Squeeze the juice from the grape fruit and lime remove seeds ,strain if u like then add sugar,salt and pepper mix well then drizzle EV Olive oil slowly while u continue mixing with one hand.So the oil does not separate from the vinaigrette.

Note :

  • Do not make the vinaigrette too much in advance as the grapefruit juice may turn bitter.
  • If you crush the mint leaves too much it will turn black and look unappetizing.

    Thank you Anupa.Purple potatoes are available in Sprouts and many other grocery chains.They will look blackish with peel.They come in bags too.Try an assorted bag of tiny ones to get the taste.Other than the color I do not find too much difference.

    Sathya, small bags (around 600gm) with tiny potatoes are available or u can unpacked larger ones like u buy the regular potato.Grapefruit is something like our musambi and orange.You cannot peel it like the orange we get in India instead cut into two and squeeze or scoop the pulp with a spoon.Try it u will like it I think. πŸ™‚

    For me purple potatoes are very new .So if i get a bag i can do whole bunch of the same ingredients that i do with regular potatoes.hmm you gave me some ideas . I know about grape fruits but havent tasted it or in vinegrette form.So def a salad lover will grab this whole bowl.

    Purple potato, Have never tried it. How unique, Meena..the whole salad and gorgeous too. This'll make a great Thanksgiving side, for sure. I want to try the vinaigrette so bad,since my lunch is salad this would be a great alternative to my sad lemon juice/oil concoction.

    What a stunning potato salad! I love the rainbow colors. I made roasted cauliflower using purple, orange and golden cauliflower and loved the way it turned out. Always so nice when the natural beauty of fresh vegetables shines through.

    I am a usual visitor to Sprouts since it is just next doors...I will check it out during my next visit.....my husband says its unusual of me to not have seen it in Sprouts since my eyes work like spy in the grocery section :).... and he liked ur salad spread that he sat with me as I scrolled down through ur older posts which is not really him when it comes to blogs πŸ™‚ and he says u r really creative
