Vietnamese Egg Fried Rice

Fried rice  flavored with fish sauce,this is uniquely Vietnamese. 
Traditional Vietnamese cooking is greatly admired for its fresh ingredients,minimal use of oil and reliance on herbs and vegetables.Vietnamese food is often ranked as one of the healthiest cuisines in the world.

Ingredients:

2- eggs
1tbsp -vegetable oil
1/2 medium onion chopped
1 carrot cut into julienne cut
1/2 cup- fresh peas or frozen thawed peas
1/2 tsp- pepper
1 tsp- sugar
2 tsp- fish sauce
1 tsp- soy sauce
3 cups- cold cooked rice

Method:

1. In a small bowl beat eggs well.
2.In a large skillet heat  oil over medium heat for 1 minute add eggs and cook them quickly,scrambling them with a spoon.Keep it aside.
3. In another pan heat oil over medium heat add onion and saute for 2 minutes.Add carrot, peas and stir and cook for 5 minutes
4.Add pepper ,sugar,fish sauce and soy sauce and stir
5.Add rice breaking clump if any.Cook uncovered until heated through.
6.Just before serving add scrambled eggs and mix well.Serve hot.

NOTE:

I have added shredded  cabbage ,pinch of celery may be red bell pepper.

It is a great way to use leftovers,any kind of meat or vegetable can be added.It can be easily whipped up if u have all the ingredients and some leftover rice.

Make only what u need as you are using leftovers .Why?because the egg will start to smell and u may lose the appetite to eat it.
