Quinoa Salad is for everyone who wants to try something different. No oil, no cheeses, no vinaigrettes but I promise this is salad is awesome and easy to make.
Ideal food for lactose intolerant, vegans, diet watchers and sick. Quinoa salad can be served as a light salad along with barbecues, spicy meats or seafood preparations. Here I have served it with Chicken Roulade ( oil free)
I have tried this many times and has always been a big hit at home.

Quinoa – 1 cup
Spinach – a handful
Coriander leaves – a small bunch
Green chili – 1/2
Red bell pepper – 1/2
Frozen corn – 1/2 cup
Salt to taste
Fajita seasoning mix – 1/2 to 1 tsp (as per taste)
Lime juice of half a lime
Wash and soak the quinoa for 20 minutes.
Chop all the green leaves finely also the bell pepper and green chili.
In a non stick pan add two cups of water and allow it to come to a rolling boil then add the quinoa cover and cook on low heat until most of the water has evaporated
Add salt and fajita seasoning.
when most of the water has evaporated add corn and continue cooking until all the water has evaporated.
Add some greens and little bell pepper chopped soo the flavors sink in.
Switch off heat and once it cools slightly add the lime juice and and rest of the veggies and mix gently.
Serve warm along with chicken or fish as you like.
Tastes good for the next day too and stays well in. the refrigerator too. So it a great make ahead salt.
