Salmon and Potato Salad

Salmon and Potato Salad served with New England special hotdog buns, some juicy colorful heirloom tomatoes and french fries. A creamy mild seafood potato combo for the warm balmy afternoon.
East Coast summers are really short but scorching hot I am not complaining cos we just finished our quota of long freezing winter… so we are on a salad and seafood diet for the time being.
We went whale watching last weekend to Cape Cod I must say it was really a memorable one. To go to Sea world and see trained whales performing acts is another thing but to go few hours into the sea in a small boat and see untrained ones in their natural habitat  is mind blowing. The whales dived with the boat for a short distance very gracefully .Later playfully went from side to side like a happy dog and we ran around in the near-empty boat to catch the glimpses. It seems it was our lucky day there were plenty of whales close to the boat, was indeed a feast for the eyes.
Don’t ask me for pics cause for the very first time I went without my camera on a trip  and decided to live and enjoy the moment and not worry about taking hundreds pictures to get that one perfect picture with straightest horizon line and whale tail with dripping droplets in a rocking boat.


Salmon and Potato Salad recipe
Ingredients: (serves 3)
Salmon – 1 fillet 6 oz piece
Potato -1 (medium – russet ) chopped
Mayonnaise – 2 tbsp
Garlic – 6 flakes
Sour cream – 2 tbsp
Spring onion – 2 sprigs
Garlic powder -1/3 tsp
Salt and Pepper to taste
Butter – 1 to 1 1/2 tbsp + olive oil
To serve:
NewEngland hotdogs #PriceChopper brand

Heat butter and olive oil  and put garlic then potato chopped allow it get a bit brown then add the salmon into the same pan add salt, pepper and garlic powder, cook until done on both sides of the fish is done. Allow it to cool then roughly flake it also lightly mash the potato.
Thoroughly whisk the sour cream and mayonnaise together add the chopped spring onion too.
Finally add the fish into the mixture and gently mix. Refrigerate until ready to serve.

Tomato Salad:
Heirloom tomatoes – 3 sliced
Mix olive oil -2 tsp, lime juice  -1 tsp a pinch of salt ,sugar and pepper powder pour into a small bottle and shake vigorously pour on the sliced tomato when ready to be served  keep fruit and vinaigrette chilled until served.

Serving suggestion Salmon and Potato Salad, Tomato Salad,French fries , lemon wedges and New England hotdogs.

    Understood, sometimes picturing is not the priority but having a great time with nature and returning home feeling satisfied. Nice salad, which I think can be filled between toast for a complete meal. Both -salmon and potatoes are a fav in house, so this salad, do I have to say more? Recipe is definitely treasured.
