Arugula and Grapefruit Salad

Arugula and grapefruit salad , a citrusy tart grapefruit with slightly bitter arugula and wake me up oniony vinaigrette brings the pop of color and flavors of Spring.

Winter has been pretty tough and the much awaited Spring  showed up reluctantly just last week. I have been eagerly waiting to break free from soups and  chilies for the time being at least. The Sun has been on peekaboo mode and heavy rain is in the process of washing down all the salt accumulated on the sidewalk. Phew! Gloomy dark days go away... May please come fast...
Well, as they say everything starts in the mind so lets clean up and fill with fresh thoughts and food:)

 The tart grapefruit and bitter arugula  with the heat of pearl onion is the right combination to wake u up and feel good. The grapefruits I had however was not looking pinkish or ruby red enough for me so the sweet mini peppers were brought out for the pop up color I need the most.I am done with nuts or cheese on top for anything for atleast for a  month or two but feel free to add ur favorite grated variety.

So here's the VEGAN SALAD for u.

Ingredients: (Serves 1 )
Arugula-1 cup
Grape fruit- 1/2 of 1 sliced 
Sweet mini pepper- 1or 2 
Pearl onion-1 sliced (red)
Vinaigrette:
Olive oil-2 tsp
Lime juice- 1/2 of 1  
Pearl onion - 1 red crushed 
Crushed black pepper to taste
Salt to taste
Method:
Wash the arugula and wrap it loosely with a paper towel to absorb the excess water.Meanwhile
cut off the peel of grapefruit neatly without the white pith. Cut the segments gently. Cut the sweet pepper into rounds and keep it ready.
Into the lime juice add crushed pearl onion, the black pepper and salt. Slowly add the olive oil while stirring constantly. Ideally pour everything into a small bottle and shake vigorously and it should work well.
Set the arugula and grapefruit, sweet pepper and  pearl onion on the salad bowl pour the vinaigrette as needed on top, make sure its equally distributed I don't stir to after that as the grapefruit gets mushed. 
Serve immediately for a light meal. 
If lunch is on your mind salad tastes excellent with a nice piece of seared salmon or steak.
Go for mustard sauce, mayo,shaved or grated cheese, sherry vinegar,white wine options to tone down the pungent bitter flavor of arugula, if u think its over powering for you.

    A light salad is always my favorite. Its always refreshing when you have a citrus fruit in the salad. The salad looks simple and refreshing!!

    Yesterday it snowed a bit here, no accumulation, but the day started like that. April snow instead of April showers. Its getting warmer today. Hoping for more sunshine.

    I never tasted arugula feeling that i would be so bitter,you answered my mind.One day i get the courage to pick arugula and have it as a salad..This reminds me of fresh spring afternoon.Lovely spring flavors.
