Bell pepper peanut stir fry
Ingredients
- 1 1/2 Bell pepper capsicum – sliced
- ½ cup roasted powdered peanut
- 1 tbsp Olive oil Sunflower oil, peanut oil
- 6 cloves Garlic chopped
- 1 medium onion – sliced
- ¼ tsp Turmeric powder
- 1 tsp Red chili powder
- Salt – to taste
Instructions
- Coarsely powder the peanut by quick pulsing in a spice jar and keep aside. Do not grind to paste.
- in a wide pan heat oil add the chopped garlic, allow it to soften then add the sliced red onion sauce until turns pink then add the red chili powder, turmeric powder and salt . Stir once and cover and cook until the onion is almost cooked.
- Add peanut powder towards the end sauté everything once quickly and add the bell pepper cut into thin long strips. Cover and cook for 2-3 minutes until bell pepper is half cooked only
- Mix everything well. Make sure the bell pepper still has the crunch remove from flame and serve immediately.
