Mushroom and leek curry A delicious vegan curry that is not too spicy and goes well with Black rice. A weekday summer meal sorted.
I just revisited a post I had written in 2014 and 4 years later I feel the same :I have been feeling sluggish and groggy past few days as the weather has been playing havoc on my allergies.I look like the T.V serial star who has cried all day.
Some days everything is fine but the other days it is not so good. Haven’t made anything spicy for many days, cooking has come down to just what is required. I have been looking for something that does not trigger my allergy. Whoever said nothing is constant I strongly disagree cos allergies are!
On the brighter side this video just WON the best Indian blogger video contest. It is not a a great video you must be thinking and I too agree with you but the motivation is huge for someone who started out so soo late on Youtube.
Mushroom and leek curry recipe:
Ingredients:
Portobello Mushroom -- 4 or 5
Cremini mushroom - 6 chopped
Leek - 2 (Use tender leek)
Garlic -5 - 6 flakes chopped
Butter -- 2 tsp
Pepper powder - 1 tsp
Chili flakes - tsp
Salt to taste
Sauce mixture:
Cloves 3-4 crushed
Mustard paste - 1 tsp
Soy sauce -2 tsp
Thyme chopped - 2 sprigs
Olive oil 1 tsp
Coconut milk mixture:
Rice powder or arrowroot powder - 1 tsp
Coconut milk - 1 -2 tsp or as much a as required
Cold water to dilute it
Method
Clean the portobello mushroom well and remove the gills from portobello mushrooms.Heat a grilling pan and add 2 tsp of olive oil and grill this until half cooked do not move it around as we are looking for charred marks
Meanwhile discard leek root cut it into two wash and clean check well .There may be sand and dirt inside.
Drain well and chop roughly.
Heat 2 tsp butter when it melts add the garlic when that crisps up add the mushroom saute it for few minutes then add leek chopped and the pepper ,chili flakes and salt saute then cover and cook until half done
Arrange the mushroom on to the curry and add the sauce mixture over it cover and cook until done.
Once cooked add the coconut milk mixture over it give it 2-3 minutes to cook well.
Remove from heat and serve hot with black rice.
