Cherry tomato salad is made in the peak of summer with just few basic ingredients,nothing fancy yet so delicious. Vegans, you are covered!
Everything you see in the pic is store bought but there is some kind of joy in making a simple salad to go with it, agree or not ? Well life hasn’t moved an inch from where I left you in the last post but I know I am loving cherry tomatoes more and more these days.
Cherry tomato – 300 gms
Onion – 1/2 of 1
Mint leaves – a few chopped
Olive oil – 1 to 2 tsp
Lime juice 1 tbsp
Salt and white pepper to taste
Chop the onion to desired size and add lime juice,olive oil salt and pepper and give it few tight squeezes with your lovely hand, this softens it ) and then allow it to sit for few minutes.
Before serving add the cut tomatoes and mint leaves, gently mix it and serve.
