Everything you see in the pic is store bought but there is some kind of joy in making a simple salad to go with it, agree or not ? Well life hasn't moved an inch from where I left you in the last post but I know I am loving cherry tomatoes more and more these days.

Ingredients:

Cherry tomato - 300 gms

Onion - 1/2 of 1

Mint leaves - a few chopped

Olive oil - 1 to 2 tsp

Lime juice 1 tbsp

Salt and white pepper to taste

Method:

Chop the onion to desired size and add lime juice, olive oil salt and pepper and give it few tight squeezes with your lovely hand, this softens it ) and then allow it to sit for few minutes.

Before serving add the cut tomatoes and mint leaves, gently mix it and serve.
