Savory Semolina Cake / Vegetarian Savoury Cake is a veggie filled excellent slow carb releasing make ahead breakfast.

Ingredients

  • 1 cup Semolina / Sooji /Farina I used coarse semolina u may use fine too
  • 1 cup Vegetables carrot - grated, frozen peas thawed beans chopped
  • 1 tbsp Ginger grated, heaped
  • 1 Green chili chopped
  • 1 tsp Red chilli powder
  • 1/3 tsp Turmeric powder
  • 3/4 cup Yogurt Keeps the cake moist
  • 1/2 -3/4 cup Water
  • 1/2 tsp Red chili flakes optional
  • 3 tbsp Cooking oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin
  • Curry leaves
  • 1/2 tsp Soda by carbonate/Baking soda 11/2 tsp of baking powder mixed with lime juice 1 tbsp
  • 1 tsp Sesame seed
  • Salt to taste

Instructions

  • Mix semolina and yogurt keep aside for a few minutes ,vegetables, ginger,green chili ,red chili powder,turmeric powder,red chili flakes,salt to taste.Add water just enough to make it into thick yet scoop able batter.
  • Heat cooking oil when almost hot add mustard seeds when it crackles add cumin seeds remove from flame add curry leaves. Add this to the semolina mix well. Just before putting batter into the well oiled pan add soda by carbonate mix the batter quickly.
    (After adding the rising agent do not keep the batter outside for too long or the bubbling action will get over quickly and the cake won't rise) Level the top and sprinkle the sesame seeds on top.
  • Preheat oven to 400 F and bake 30-40 minutes.Until cake tester comes out clean. Let it rest for five minutes then transfer on top a wire rack .
  • Cut the savory semolina cake and served immediately or at room temperature with mint chutney or ketchup Goes well with Indian chai./Black tea / Black coffee.

Notes

  • Just before putting batter into the well oiled pan add soda by carbonate mix the batter quickly.
  • After adding the rising agent do not keep the batter outside for too long or the bubbling action will get over quickly and the cake won't rise. So work on as soon as u can
  • Cake is crumbly when warm so let it cool off before slicing.
    Use grated /finely chopped veggies like cabbage, beans etc
