Tender, cooked chicken with the sweet and tart flavors of apple and dried cranberries

1Chicken breast
1/2 to 1Granny Smith apple
1small stickCelery
2 or moretbspDried cranberries
11/2tbspMayonnaise
2tspOlive oil
Seasoning
1 tspGarlic powder
1tspPepper powder
Salt to taste
1 to 2sprigsChopped parsley leavesUse Fresh
Instructions
Sprinkle salt and pepper on the chicken breast generously. Heat olive oil in a pan when it is hot add the chicken ,after 2 minutes flip to the other side reduce heat to low ,covered, let it cook for 10 minutes. Switch off heat do not open the lid let it sit on the stove for another 10 minutes.
Cut the chicken into small pieces add the cranberries into the juices if any so it will absorb the juice and slightly plump up.Allow it to cool down. Chop the apple, celery and parsley and keep it ready.
Into a mixing bowl add the garlic powder, mayonnaise, salt and pepper chopped parsley. Fine chop celery and apple mix some of the dressing to it Add the rest of it to cranberry and the warm chicken so it gets a chance to absorb flavors. Once the chicken is cooled completely mix everything together. Add more mayo if needed to coat the chicken pieces well. Refrigerate this in an airtight container until ready to be served.
Notes
Chicken can turn very dry if cooked for long.
If you think the chicken turned dry then add any liquid left in the pan while cooking. The pan juices will moisten the breast piece perfectly.
When you add mayo start with one tbsp then add more if needed once the salad turns watery then it turns into a soggy mess.
Cut the apple and apply some lemon juice on the pieces if needed, to add tartness.
A pinch of sugar will balance all the flavors well.
Do keep in mind - Dried cranberries are sweet but the fresh cranberry is puckering tart.
