I usually make all kinds of pizza from the scratch for Friday night.But to tell you the truth it takes a lot of time and work to knead and wait few hours for the dough to rise finally bake it just in time to serve it hot. I don't mind doing it but with almost same ingredients these puffs can be done in a jiffy so why not go for it right!
I am sure all pizza loving families would enjoy these puffs.
Ideal for kids parties, movie night ,grab and go snack or in-between practices' for your kids. Filling and mess free car snacks.... Can World favorite pizza get any better than this!
Ingredients :
All purpose flour - 3/4 th cup
Baking powder 1/2 tsp
Pepperoni - 15 to 20 (chopped)
Cheese grated - 1 cup ( a mix of mozzarella , sharp cheddar and 1 tbsp of Parmesan)
Red chili flakes - 1/2 tsp
Fennel seeds - 1/2 tsp
Italian seasoning - 2 tsp
Green bell pepper- 1/4 of 1 (chopped )
Egg-1 lightly beaten
Milk -1/2 cup-3/4 cup
Method :
First mix the flour ,baking powder and spices together.Then add milk and egg whisk until combined .Add the cheese,pepperoni, bell pepper mix until combined.Let it stand for 10 minutes. Scoop into the lined muffin tray and bake at 375 F for 20- 25 minutes until top is golden brown.
Serve it with soup and salad for week night dinner or as a snack with some warm marinara sauce.
Note : Makes around 24 mini muffins.
I used a regular muffin tray and it yielded around 7 muffins.

I tried these tonight. Made them with red bell pepper instead of green and diced spicy sausage instead of pepperoni, because that's what I had on hand. I also modified the seasonings according to my preference and inspiration, since I can't find a decent Italian seasoning mix where I'm from (so I used rosemary, thyme, ground black pepper, red chili flakes, sweet red pepper powder, garlic powder and onion flakes). They turned out great! The batter is light and fluffy. I've tried another pizza puff recipe before and those turned out very bland and heavy. Thank you for the recipe, will definitely keep using it!

The recipe is quite forgiving, any spice u have in hand could be used. The spice combination u used here sounds really flavorful.
