Diamond cuts made with whole wheat flour.A savory snack to munch on at anytime of the day with coffee / tea / drinks(with or without alcohol :))
An ideal Diwali savory snack to revive your sweet slathered taste buds.
These fried chips were mostly made at home during study holidays.Even though studies would not happen at a steady pace the visit to the kitchen did :)).A nice comfortable chair and a book full of unknown matters refusing to rush into the head made matters worse . Mom thought its my lack of interest but little did she know that the snack next to me was the culprit that overtook all the eagerness to study :))
Now its only a tea time snack as there are no exams to blame on :))
As I was reading the newspaper the other day I felt someone was looking at my snack he hee... a feathery foodie was drooling from the tree top she even waited until I took a snap of her :)) Switched branches uncomfortably, I threw her a piece, she pecked on it ,looked at me and flew away.She must have thought what a waste of time! :)) Wish I could refuse fried chips so easily.
Ingredients:
Whole wheat flour - 1 cup
Chili powder-1/2 tsp
Cooking oil- for deep frying
Salt to taste.
Method:
1.Mix the flour ,chili powder,salt 2 tsp oil and enough water knead it to a pliable dough but not too soft keep it covered for half an hour. Divide the dough into 2 or 3 balls.
2.Roll out each ball into disc.
3.Place each disc on a plastic sheet or parchment paper then with a knife or pizza cutter cut into small squares/ diamond shapes of 2 cm - 3 cm length (equidistant horizontal and vertical lines).
4.Heat oil in a heavy bottom pan when it is hot enough (see notes) add few at a time it should puff up then put the slotted spatula and fry it till crisp.
5.Remove on to a paper towel .When it is at room temp put it in air tight container.
NOTE:
- Put one small square to test.If it becomes dark brown very fast then the oil is too hot , remove from stove and let it cool for few minutes then continue with frying.If the oil is not hot enough it won't puff up and it will absorb too much oil too.
- Diamond cuts is usually made with maida /all purpose flour.

Wheat cuts are definitely a healthy version. My mom makes it with Maida... Kitchen was my tension reliever spot during my study days too. opening up all the containers just to see, if I have got something to munch always relieved ma tension 😉

Hi Sanober,
I have not tried baking diamond cuts but have tried similar ones.I find that it does not puff up and becomes more like a thin cookie kind.Hope that helps, do let me know if u ever try this out.
