Easy White nectarine cobbler cake--old fashioned

Nectarine cobbler cake is really yummy... .It has the fruit glistening on top and cake at the bottom.The whole house smells of the cinnamon now what more can I ask for!! 




I don't know why I have ignored nectarines and peaches for quite a long time I was more worried about kiwis I think .I always looked up for recipes to salvage the over ripe one sitting on the counter.My girl being a fruit hater,never really bothered about anything but her bag of chips.ya... tusker likes fruits but he religiously sticks to his regular apple ,orange, banana routine.I don't mind any fruit  as long as it is served to me washed cleaned and  ready to eat .. oh ya ..did I say  peeled too..:))

Honestly tell me how many times have you felt the same.


The other day these beautiful nectarines caught my attention,the peel looked more of a water color painting than a real fruit .So much similar to brush stokes ,I definitely spent some time admiring the shades and highlights.

        Now I must admit I am yet to develop a liking for the cobbler where the whole thing is runny inside.Though I like to see the glossy goodness flowing from the cobbler something in my mind tells me it is not done ,but I was so carried away by the ease of just throwing in all the stuff and not mix it ...now how cool is that when u don't have to slog.So I decided to go for the Easy peach cobbler from MyRecipes.com and bake till done like any other cake.The success of this recipe tells me I must make more of it.. 

PRINTABLE RECIPE

Ingredients             

Nectrines-3(Peeled and sliced)
All purpose flour-1 1/2 cups
butter -1 stick
milk- 1 cup
egg-1
sugar - 1 cup + 1/2 cup
cinnamon powder-1/2 tsp
lemon juice-1/2 of one whole
salt - a pinch
baking powder-1/2 tsp

Method

1.Bring 1/2 cup sugar, nectarine slices, and lemon juice to a boil over high heat, stirring constantly add cinnamon powder towards the end.Keep aside.

2..Melt butter in a 13- x 9-inch baking dish by simply cutting the stick into big pieces and put the dish in to the oven switched on for pre-heating to a really runny consistency .Once melted just swirl the tray so that the butter gets spread evenly .I know that"s lot of butter but that made the dish  superb.

  1. 3.Combine flour, 1 cup sugar, baking powder, and salt.Add egg and milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).

  2. 4.Carefully pour the nectarine mixture over the batter evenly .Remember do not stir ,so may be you can spread the fruit evenly by dropping slices on the batter 

  3. 5.Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool with vanilla ice cream or whipped cream.

  4. Can be served with other fresh fruits too...



Note

The sides may look slight burnt but does not affect the cake.The cake tends to pull from the sides too.

Do not  mix butter ,batter and fruit mix .They come out all mixed well..Even if it is one small  step (of beating the egg) reduced I am happy ...do  u feel the same?
